Ginger Pineapple Stir Fry

Ginger Pineapple Stir Fry Recipes - Shape It Up


  1. 1 lb pork tenderloin, cubed

  2. 1 cup pineapple, chunks

  3. 2 large carrots, thin coin cut

  4. 1 T Ginger paste

  5. 1/2 tsp ground ginger

  6. 1/4 cup sweet peas, frozen

  7. 2 T Coconut Aminos

  8. 2 T Soy Sauce, reduced sodium

  9. 1 cup cooked white rice


Spray pan with non-stick cooking oil. Heat pan to medium-high. Add tenderloin and sauté until no longer pink. Remove and keep warm. In same pan, add ginger paste, carrots, pineapple, peas, ground ginger, coconut aminos and soy sauce. Stir until cooked (*you can add little bit of pineapple juice if it starts to stick).  Add tenderloin back in to reheat. Plate with rice and top with tenderloin mix.
