3 large bananas, ripened
1 1/2 cups flour
1 tsp baking powder
1/3 cup unsweetened applesauce
Preheat oven to 350F. Prepare muffin tin (either spray with non-stick spray or line with muffin cups).
Mash bananas with a fork in a small bowl. Lightly beat egg in separate bowl. Pour egg in with bananas and add sugar. Mix together. Then stir in applesauce. In another medium bowl, mix flour and baking powder. Add dry ingredients to wet ingredients and mix together.
Pour batter into muffin tins about 2/3 full. Bake for 15-20 minutes or until a toothpick comes out clean.
